We get that dogs are part of the family, so you are welcome to bring them along to all Fat Squirrel Outdoor locations. It is safer for the people and the hounds if they stay on the lead - we are willing the hold the lead while you take part in the axe throwing. Please pick up and as we don't have bins on site please take away and put in public disposal.
This beautiful rural woodland on the edge of Notgrove village in the Cotswolds is the perfect place to switch off and unwind away from the hustle and bustle of modern life. Located between Bourton-on-the-water and Northleach it is the perfect place to relax in tree hamocks or to catch up with friends around the fire. Looking for a bit more adventure - then throw some axes and learn to light beautiful campfires in a bushcraft style.
Situated on a certificed organic fruit farm just outside Burford this delightful Fat Squirrel woodlamd retreat is perfect for group bookings - get togethers for friends and companies team days.
We are not currently operating at Foxburrow wood while it undergoes some work.
Beetroot & Carrot Soup
While any time of year is a great time for soup, the colder months lend themselves particularly well to a warm bowl of soup with a thick chunk of bread. While this is peak beetroot season, carrots are right at the end of theirs. This makes them large and slightly woody, with their natural sweetness giving way to earthy rich tones. No matter as beetroot is full of sugars and floral sweetness that pairs beautifully.
This soup could be made entirely in the oven, but using fire gives it a different flavour, giving it deliciously different winter warmth - with the added bonus of not needing to prepare any of the vegetables.
Ingredients;
1. The white embers deliver a perfect heat to coal roast the roots vegetables, deeply charring the skins while cooking the flesh with a delicate smoke. Lightly coat the beetroot and carrots in a little oil then simply place on the embers. Leave to develop a good char before turning until all sides are covered, then wrap in foil to cool.
2. After half of the roots are charred, place the onions root side down onto the embers. The paper and outer layers will burn as they cook giving a light smoky flavour. Once all the skins are black and the onion begins to emit steam, remove from the fire and cool in foil.
3. While the vegetables are cooling, heat a large pot or pan over the fire with a healthy puddle of rapeseed oil. Once shimmering add the whole peeled garlic and brown on all sides before removing from the heat.
4. Now open up the foil and simply wipe off the heavy charring, but don’t worry about being to thorough. Cut into large chunks and add to the pot.
5. Put the pit back on the fire and add the spices. Once sizzling cover with stock or water, add the bay leaves and liberally season. Bring to the simmer and cook for around 20 minutes to allow the spices time to infuse.
6. Once infused, remove from the fire and cool slightly. Remove the bay leaves and liquidise, then taste for seasoning before enjoying with some crusty bread and a farmhouse cheddar.
